Triticale is a hybrid betweem wheat and rye. It is excellent for sprouting and for breakfast cereals. It also works well for ginding and adding to to specailty flours and is wonderful for its unique flavor similar to the flavor you get in a sourdough bread. Triticale is excellent for flaking and rolling. Triticale is a wheat-rye cross that's higher in protein than either of its parents. It has a pleasant enough wheat-like flavor, but it's prized mostly for its hardiness and ability to grow in poor soils.
